Gluten Free, Dairy Free Baked Oatmeal Bars

0.5 cup of gluten-free regular or old fashioned rolled oats (not instant or quick)
1.5 tsps baking powder
0.5 tsp salt
1 can lite coconut milk or fat-free milk
1 egg or egg replacer
0.5 cup of unsweetened applesauce
0.25 c granulated sugar or equivalent sweetner
1.25 tsp pure vanilla extract
2.4 tsp ground cinnamon
0.5 c raisins or chopped dates
0.5 c coconut
0.5 c chopped nuts (peanuts or cashews work nicely)
Preheat oven to 350.
Oil an 8x8" pan.
Combine dry ingredients and mix well (hold back some of the raisins, coconut, and nuts to sprinkle on top later.
Add liquids and mix further.
Pour batter into pan and sprinkle raisins, coconut and nuts on top.
Place pan in oven and bake 30-35 minutes (cover with foil if it browns too quickly).
Remove, cut into squares, and enjoy.
For Egg-free bars, replace one egg with flax gel. To make flax gel, combine 1 Tbsp flax meal with 3 Tbsp hot water, let sit 5-10 min until thickened.
