Dr. Dirks's Favorite Recipes
Gingerbread Apple Crisp
8 Cups sliced Braeburn Apples
1/2 Cup blanched almond flour
2 Tbl flaxseed meal
1/4 tsp salt
1 Tbl ground cinnamon
1 Tbl ground ginger
2 Tbl palm oil shortening or butter
2 Tbl Honey
1 Tbl Vanilla
1/2 Cup chopped Pecans
Place sliced apples in a 2 quart baking dish & set aside.
In a large bowl, combine almond flour, flax, salt & spices. Mix in the shortening, honey & vanilla.
Work the mixture with your hands until it forms a dough. Work in the chopped pecans, gently.
Sprinkle dough over the chopped apples.
Bake covered at 350 degrees for 60 - 75min.
Remove from oven & allow to cool uncovered. Serve.
